Making spruce bud syrup is about much more than getting something sweet and tasty for dessert or cheese. It's about forests and fresh air, about using resources we have right outside the kitchen door and about taking care of old food traditions. And this is a very nice activity to take the kids on. Once the little hands start picking, they are almost unstoppable! And being able to take part in the rest of the process can almost be experienced as magic; to see how the light green liquid is conjured into an increasingly red syrup.

Recipe in brief: Boil the shot and strain. Measure out the liquid, and add sugar according to the amount of liquid. Add 2 parts sugar to 3 parts liquid. Details and other areas of use online.
